Japanese Izakaya – Food Truck

A food truck that I recently saw during travels in Bangkok. Made a mockup of it + some improvements.

  • Offers:
    • Drink
      • Beer taps with 3-5 beers
      • 2-3 further beers in bottles
      • Bottles of:
        • Sake
        • Water
        • Coke
        • Other standard mixers
      • Cocktails
        • Ingredients I see:
          • Bacardi white
          • Sangsom
          • Cointreau
          • Jäegermeister
          • + others. In total about 10 cocktails offered
    • Food
      • 9 different menu items – Easy to eat, not difficult to prepare
        • Yakitori Skewers; 35.- for 3 different types
        • Pork Rice Bowl (with 1/2 egg) 79.-
        • Pork Yakisoba 80.-
        • Takoyaki
        • Gyoza
        • Karaage
        • Fried Shrimp
  • Equipment:
    • Materials: 
      • Menu boards around food truck advertising Logo, Name, side by side: image and name in Japanese (vertical) and in local and price. 
      • Beer glasses by brand
      • Bar chairs (5 in the example) opening goes down to create counter
      • Couple of beer creates and box chairs for extra and for style
      • Large red lantern/s
      • Sign (light up) to hang outside when fixed
      • Red led lighting on the ceiling for the atmosphere
      • Black red Japanese restaurant flag over the bar tap
      • Board menus on the counter with stuck on menus of products against the bar on the counter (horizontal)
        • Food & drink pictures stuck on the counter, in Izakaya style
    • Staff
      • 1 staff for <10 customers (<4 tables) sufficient
      • Rush periods or more seating available, 2-3 staff
  • Marketing:
    • Promote Line/WhatsApp/FB for chat and order on QR code at the bottom of menu boards
    • Park in locations with public seating available with little direct competition. (Other food trucks OK, but avoid fixed bars)
